Food Designing at CEDIM
For their second term Project, my students at the food design laboratory in CEDIM redesigned their favorite dish. We had it all: from typical Mexican dishes like mole and chicharrón, to foreign tastes of sushi and baklava. They all followed a design methodology and carried out their projects doing concept development, sketching and even prototyping their ideas before going into the kitchen and “cooking their designs”. We had a great presentation day accompanied by CEDIM teachers, directors and even a chef who helped us evaluate their concepts, presentation, and taste (an important part of food design).
